Serves: 4 | Prep Time: 10 minutes | Cook Time: 25 minutes
Ingredients
- For the Chicken:
- 4 boneless, skinless chicken thighs (or breasts for a leaner option)
- Salt and black pepper to taste
- 1 cup buttermilk (for marinating)
- 1 cup all-purpose flour
- 1 teaspoon paprika
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon cayenne pepper (adjust for heat preference)
- ½ teaspoon baking powder (for extra crispiness)
- Vegetable oil for frying
- For the Sweet Heat Sauce:
- ¼ cup honey
- 2 tablespoons sriracha sauce (or your favorite hot sauce)
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar (or white vinegar)
- 1 teaspoon grated ginger (optional, for added depth)
Instructions
- Marinate the Chicken:
- Season the chicken thighs with salt and pepper.
- Place them in a bowl and pour the buttermilk over the chicken. Let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours.
- Prepare the Flour Coating:
- In a shallow bowl, whisk together the flour, paprika, garlic powder, onion powder, cayenne pepper, and baking powder.
- Fry the Chicken:
- Heat about 1 inch of vegetable oil in a large skillet over medium-high heat.
- Dredge each piece of marinated chicken in the seasoned flour mixture, pressing gently to ensure the coating sticks.
- Fry the chicken in batches, cooking for 5–6 minutes per side, or until golden brown and crispy. Use a thermometer to check that the chicken has reached an internal temperature of 165°F (74°C).
- Make the Sweet Heat Sauce:
- While the chicken is frying, whisk together honey, sriracha, soy sauce, rice vinegar, and ginger (if using) in a small bowl.
- Toss the Chicken:
- Once the chicken is cooked and crispy, remove it from the skillet and drain on a paper towel-lined plate.
- Drizzle or toss the fried chicken in the sweet heat sauce until well coated.
- Serve:
- Serve the crispy sweet heat chicken hot with a side of rice, steamed veggies, or a fresh salad.
