Crockpot Chicken and Dumplings
Ingredients
- 4 boneless, skinless chicken breasts or thighs
- 1 medium onion, diced
- 3 carrots, peeled and sliced

- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 can (10.5 oz) cream of chicken soup (or homemade version)
- 1 teaspoon dried thyme

- 1 cup heavy cream or half-and-half
- For the Dumplings:
- 1 ½ cups all-purpose flour

- ¾ cup milk

- 1 teaspoon dried parsley (optional)
Instructions
- Prepare the Chicken and Vegetables:
- Place the chicken breasts (or thighs) in the bottom of the Crockpot.
- Add the diced onion, carrots, celery, garlic, chicken broth, cream of chicken soup, thyme, parsley, garlic powder, salt, and pepper. Stir to combine.
