  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce (optional)
  • 1 tbsp cornstarch
  • 2 tbsp vegetable oil, divided
  • 1 bell pepper (any color), sliced
  • 1 medium carrot, julienned or thinly sliced
  • 1 cup broccoli florets
  • 2 garlic cloves, minced
  • 1 tsp grated ginger
  • 2 tbsp low-sodium soy sauce (for sauce)
  • 1 tbsp hoisin sauce or teriyaki sauce
  • 1/2 tsp sesame oil
  • 1/4 cup (60 ml) water or chicken stock

For the Yellow Rice:

  • 1 cup (200 g) long-grain rice (like basmati or jasmine)
  • 2 cups (500 ml) chicken or vegetable stock
  • 1/2 tsp ground turmeric
  • 1/4 tsp ground cumin
  • 1 tbsp butter or olive oil
  • Salt to taste

Garnish:

  • Green onions, chopped
  • Sesame seeds

Instructions

Step 1: Prepare the Yellow Rice

  1. Rinse the rice under cold water until the water runs clear.
  2. In a medium saucepan, heat butter or olive oil over medium heat. Add turmeric and cumin, stirring until fragrant.
  3. Add the rice and toast for 1-2 minutes.
  4. Pour in the chicken or vegetable stock and add salt to taste. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-18 minutes, or until the rice is cooked and the liquid is absorbed. Fluff with a fork and set aside.

Step 2: Marinate and Cook the Beef

  1. In a bowl, mix soy sauce, oyster sauce, and cornstarch. Add the sliced beef and toss to coat. Let marinate for 10 minutes.
  2. Heat 1 tbsp vegetable oil in a large skillet or wok over high heat. Stir-fry the beef for 2-3 minutes until browned and cooked through. Remove and set aside.

Step 3: Cook the Shrimp

  1. In the same skillet, add another 1 tbsp of oil. Cook the shrimp for 2-3 minutes, flipping halfway through, until pink and opaque. Remove and set aside with the beef.

Step 4: Stir-Fry the Vegetables

  1. Add garlic and ginger to the skillet, cooking for 30 seconds until fragrant.
  2. Add broccoli, carrots, and bell peppers. Stir-fry for 3-4 minutes, or until tender-crisp.

Step 5: Combine Everything

  1. In a small bowl, mix soy sauce, hoisin or teriyaki sauce, sesame oil, and water or stock. Pour over the vegetables.
  2. Return the beef and shrimp to the skillet, tossing to coat everything in the sauce. Cook for 1-2 minutes to heat through.

Step 6: Serve

  1. Plate the yellow rice and top with the shrimp and beef stir fry.
  2. Garnish with green onions and sesame seeds. Serve immediately.

Tips:

  • For extra spice, add a pinch of red pepper flakes or drizzle with sriracha.
  • Substitute vegetables like snap peas, zucchini, or mushrooms based on preference.
  • Marinate the beef longer for more intense flavor.

Enjoy this flavorful, balanced dish that’s sure to satisfy!
