For the Sauce:

  • 1/4 cup (60 ml) soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp hoisin sauce
  • 1 tsp sesame oil
  • 1 tsp sugar
  • 1/4 tsp ground white pepper (optional)

For the Stir-Fry:

  • 2 tbsp vegetable oil
  • 1/2 lb (225 g) shrimp, peeled and deveined
  • 1 cup shredded cabbage
  • 1 medium carrot, julienned or thinly sliced
  • 1/2 cup snap peas or green beans
  • 1/2 cup sliced bell pepper (any color)
  • 3 green onions, sliced into 1-inch pieces
  • 2 garlic cloves, minced
  • 1 tsp grated ginger

Garnish:

  • Sesame seeds
  • Additional green onions

Instructions

Step 1: Cook the Noodles

  1. Cook lo mein noodles or spaghetti according to package instructions. Drain and toss with 1 tbsp sesame oil to prevent sticking. Set aside.

Step 2: Prepare the Sauce

  1. In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, sesame oil, sugar, and white pepper (if using). Set aside.

Step 3: Cook the Shrimp

  1. Heat 1 tbsp vegetable oil in a large skillet or wok over medium-high heat.
  2. Add shrimp and stir-fry for 2-3 minutes until pink and cooked through. Remove and set aside.

Step 4: Stir-Fry the Vegetables

  1. Add the remaining 1 tbsp of vegetable oil to the skillet.
  2. Add garlic and ginger, cooking for 30 seconds until fragrant.
  3. Add the cabbage, carrots, snap peas, and bell peppers. Stir-fry for 3-4 minutes, or until the vegetables are tender-crisp.

Step 5: Combine Everything

  1. Return the shrimp to the skillet. Add the cooked noodles and pour the sauce over everything.
  2. Toss well to coat and stir-fry for another 2-3 minutes, ensuring the noodles are heated through and the sauce is evenly distributed.

Step 6: Garnish and Serve

  1. Transfer to a serving dish and garnish with sesame seeds and green onions.
  2. Serve immediately and enjoy!

Tips:

  • Use fresh or frozen shrimp depending on availability.
  • Customize the vegetables with what you have on hand, like mushrooms, zucchini, or broccoli.
  • For added spice, include a dash of chili oil or sriracha in the sauce.

This Shrimp Lo Mein is versatile, delicious, and guaranteed to be a hit at your table.
