Ingredients

  • 2 tbsp olive oil
  • 2 boneless, skinless chicken breasts (about 1 lb), cut into bite-sized pieces
  • Salt and black pepper, to taste
  • 12 oz (340 g) elbow macaroni or any pasta shape
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 2 cups whole milk (or half-and-half for a creamier sauce)
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp smoked paprika (optional)
  • 1/4 cup breadcrumbs (optional, for topping)
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Cook the pasta:
    • Bring a large pot of salted water to a boil.
    • Cook the macaroni according to package instructions until al dente. Drain and set aside.
  2. Cook the chicken:
    • While the pasta cooks, heat 1 tbsp olive oil in a large skillet over medium-high heat.
    • Season the chicken pieces with salt and pepper.
    • Add the chicken to the skillet and cook for 6-8 minutes, or until browned and fully cooked.
    • Remove from the skillet and set aside.
  3. Make the cheese sauce:
    • In the same skillet, melt the butter over medium heat.
    • Stir in the flour and cook for 1-2 minutes to form a roux.
    • Gradually whisk in the milk, making sure to avoid lumps.
    • Cook, whisking constantly, until the sauce thickens (about 3-5 minutes).
    • Lower the heat and stir in the cheddar cheese, Parmesan cheese, garlic powder, onion powder, and paprika.
    • Stir until the cheese is melted and the sauce is smooth.
  4. Combine:
    • Add the cooked pasta and chicken to the cheese sauce.
    • Stir to combine and coat everything in the creamy sauce.
  5. Optional topping:
    • For a crispy topping, preheat the oven to 375°F (190°C).
    • Transfer the mac and cheese to a greased baking dish, sprinkle breadcrumbs on top, and bake for 10-15 minutes, or until golden and bubbly.
  6. Serve:
    • Serve hot, garnished with fresh parsley if desired.

Tips for Customization:

  • Add vegetables: Stir in cooked broccoli, spinach, or peas for a veggie boost.
  • Extra cheesy: Add more cheese like mozzarella or gouda for a richer flavor.
  • Spicy twist: Stir in a dash of hot sauce, diced jalapeños, or smoked sausage for a spicy kick.
  • Make it gluten-free: Use gluten-free pasta and a gluten-free flour blend for the sauce.
