Ingredients

  • 1 lb (450 g) boneless, skinless chicken breast or thighs, cut into bite-sized pieces
  • 3 garlic cloves, minced
  • 3 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese (plus more for serving)
  • 1 tsp Italian seasoning
  • 1/4 tsp red pepper flakes (optional)
  • Salt and black pepper, to taste
  • Fresh parsley or basil, for garnish

Instructions

  1. Cook the pasta:
    • Bring a large pot of salted water to a boil.
    • Cook the pasta according to the package instructions until al dente.
    • Reserve 1/2 cup of the pasta water, then drain the rest.
  2. Cook the chicken:
    • Heat olive oil in a large skillet over medium-high heat.
    • Season the chicken with salt and pepper.
    • Add the chicken to the skillet and cook for 5-7 minutes until golden and cooked through.
    • Remove the chicken and set it aside.
  3. Prepare the sauce:
    • In the same skillet, lower the heat to medium and add garlic. Cook for 1 minute until fragrant.
    • Stir in the chicken broth, heavy cream, Parmesan cheese, Italian seasoning, and red pepper flakes (if using).
    • Simmer for 3-5 minutes, stirring occasionally, until the sauce thickens slightly.
  4. Add spinach and chicken:
    • Stir in the fresh spinach and let it wilt.
    • Return the cooked chicken to the skillet and toss to coat in the sauce.
  5. Combine with pasta:
    • Add the cooked pasta to the skillet and toss to combine.
    • If the sauce is too thick, stir in some reserved pasta water to reach the desired consistency.
  6. Serve:
    • Garnish with fresh parsley or basil and extra Parmesan cheese. Serve hot.
