Instructions
- Preheat the oven:
- Preheat your oven to 375°F (190°C).
- Prepare the eggplant:
- Place the diced eggplant in a colander and sprinkle with salt. Let it sit for 20 minutes to draw out moisture. Rinse and pat dry with a clean towel.
- Cook the eggplant:
- Heat 1 tbsp olive oil in a large skillet over medium heat.
- Add the eggplant and cook for 5-7 minutes until softened. Remove and set aside.
- Sauté aromatics:
- In the same skillet, add the remaining olive oil.
- Sauté the onion until softened, about 3 minutes.
- Add garlic and cook for another minute.
- Combine the sauce:
- Stir in the diced tomatoes, tomato sauce, oregano, basil, red pepper flakes, salt, and pepper.
- Let the mixture simmer for 5 minutes.
- Assemble the casserole:
- In a greased 9×13-inch baking dish, layer half the eggplant, followed by half the tomato mixture, half the Parmesan, and half the mozzarella.
- Repeat the layers, ending with mozzarella on top.
- Sprinkle breadcrumbs over the top if desired.
- Bake:
- Cover with foil and bake for 20 minutes.
- Remove the foil and bake for another 10-15 minutes, or until bubbly and golden brown on top.
- Garnish and serve:
- Garnish with fresh parsley or basil and serve hot.
Tips for Customization:
- Add protein: Include cooked ground beef, sausage, or shredded chicken for a meatier version.
- Low-carb option: Skip the breadcrumbs and serve with a side salad.
- Cheese lovers: Add ricotta or cream cheese between the layers for extra creaminess.
- Make it vegan: Use plant-based cheese and substitute breadcrumbs with crushed nuts.
