Ingredients

  • 2 large eggplants, peeled and diced (about 6 cups)

  • 1/2 cup tomato sauce
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp red pepper flakes (optional)
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup breadcrumbs (optional, for topping)
  • Salt and black pepper, to taste
  • Fresh parsley or basil, for garnish

Instructions

  1. Preheat the oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare the eggplant:
    • Place the diced eggplant in a colander and sprinkle with salt. Let it sit for 20 minutes to draw out moisture. Rinse and pat dry with a clean towel.
  3. Cook the eggplant:
    • Heat 1 tbsp olive oil in a large skillet over medium heat.
    • Add the eggplant and cook for 5-7 minutes until softened. Remove and set aside.
  4. Sauté aromatics:
    • In the same skillet, add the remaining olive oil.
    • Sauté the onion until softened, about 3 minutes.
    • Add garlic and cook for another minute.
  5. Combine the sauce:
