- 1 lb (450g) medium shrimp, peeled and deveined
- 3 cups cooked and cooled rice (preferably day-old)
- 2 large eggs, lightly beaten
- 1 cup frozen peas and carrots, thawed
- 3 green onions, sliced (white and green parts separated)
- 2 garlic cloves, minced
For the Sauce:
- 3 tbsp soy sauce
- 1 tbsp oyster sauce (optional, for added umami)

Instructions
