Transform your breakfast routine with these delicious Cinnamon Roll Pancakes! Swirled with a cinnamon-sugar mixture and topped with a creamy glaze, they combine the best of cinnamon rolls and fluffy pancakes.
Ingredients
For the Pancakes:
- 1 ½ cups all-purpose flour
- 3 ½ teaspoons baking powder
- ½ teaspoon salt
- 1 tablespoon sugar
- 1 ¼ cups milk
- 1 large egg
- 3 tablespoons melted butter (plus more for greasing the skillet)
For the Cinnamon Swirl:
- 4 tablespoons unsalted butter (melted)
- ¼ cup packed brown sugar
- 1 teaspoon ground cinnamon
For the Cream Cheese Glaze:
- 2 ounces cream cheese (softened)
- 2 tablespoons unsalted butter (softened)
- ¾ cup powdered sugar
- ½ teaspoon vanilla extract
- 1–2 tablespoons milk (to thin)
Instructions
Step 1: Make the Cinnamon Swirl
- In a small bowl, mix the melted butter, brown sugar, and cinnamon until smooth.
- Transfer the mixture to a piping bag or a small resealable plastic bag. Snip a small corner off the bag for easy swirling.
Step 2: Prepare the Pancake Batter
- In a large bowl, whisk together the flour, baking powder, salt, and sugar.
- In a separate bowl, mix the milk, egg, and melted butter. Add the wet ingredients to the dry ingredients and whisk until just combined. (Avoid overmixing; lumps are okay.)
Step 3: Cook the Pancakes
- Heat a non-stick skillet or griddle over medium-low heat and lightly grease with butter.
- Pour about ¼ cup of pancake batter onto the skillet. Allow it to spread naturally.
- Quickly pipe a swirl of the cinnamon mixture onto the batter, starting from the center and spiraling outward.
- Cook until bubbles form on the surface and the edges look set (about 2-3 minutes). Carefully flip and cook the other side for 1-2 minutes.
Step 4: Make the Cream Cheese Glaze
- In a small bowl, whisk together the softened cream cheese, butter, powdered sugar, and vanilla extract. Add milk, a little at a time, until the glaze reaches a drizzle consistency.
Step 5: Serve
- Stack the pancakes and drizzle generously with the cream cheese glaze.
- Serve warm with extra glaze or maple syrup if desired.
Tips for Perfect Cinnamon Roll Pancakes
- Don’t Overheat the Pan: A hot skillet can cause the cinnamon swirl to burn. Keep the heat low and steady.
- Thick Batter: Ensure your pancake batter isn’t too runny to hold the swirl properly.
- Make-Ahead Glaze: The cream cheese glaze can be made a day in advance and stored in the fridge.
Enjoy these indulgent cinnamon roll pancakes for breakfast, brunch, or as a special dessert!
