Ingredients
- 4 slices of sourdough or artisan bread
- 1/2 cup ricotta cheese
- 1/4 cup sun-dried tomatoes, finely chopped (in oil, drained)
- 1/2 cup fresh spinach leaves, roughly chopped
- 1/2 cup shredded mozzarella or fontina cheese
- 2 tbsp butter, softened
- 1 clove garlic, minced (optional, for garlic butter)
- Pinch of salt and black pepper
Instructions
1. Prepare the Ricotta Mixture:
- In a small bowl, mix the ricotta cheese with sun-dried tomatoes, a pinch of salt, and black pepper. Set aside.
2. Prepare the Bread:
- Spread softened butter on one side of each bread slice. If you like garlic butter, mix the butter with minced garlic before spreading.

- Lay the bread slices butter-side down.
- Spread the ricotta mixture evenly on two slices.
