Ingredients

For the Chicken:

  • 1 lb boneless, skinless chicken breasts or thighs, cut into small bite-sized pieces
  • 1/2 cup all-purpose flour
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • 1 egg, beaten
  • 1/2 cup breadcrumbs (panko breadcrumbs work well for extra crunch)
  • Vegetable oil, for frying

For the Bang Bang Sauce:

  • 1/4 cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha (adjust to spice preference)
  • 1 tsp rice vinegar

For the Sliders:

  • Slider buns (about 8-10 mini buns)
  • Shredded lettuce
  • Sliced pickles (optional)

Instructions

  1. Prepare the Chicken:
    • In a small bowl, combine flour, garlic powder, onion powder, paprika, salt, and pepper.
    • In another bowl, beat the egg. Place breadcrumbs in a third bowl.
    • Dredge the chicken pieces first in the flour mixture, then dip in the egg, and coat in breadcrumbs.
  2. Fry the Chicken:
    • Heat a few tablespoons of vegetable oil in a skillet over medium heat.
    • Fry the chicken pieces in batches, cooking for 3-4 minutes per side until golden brown and crispy.
    • Remove from the skillet and place on a paper towel-lined plate to drain excess oil.
  3. Make the Bang Bang Sauce:
    • In a small bowl, mix together mayonnaise, sweet chili sauce, sriracha, and rice vinegar until smooth and well combined.
  4. Assemble the Sliders:
    • Toss the crispy chicken pieces in the Bang Bang sauce until well coated.
    • Place a few pieces of the saucy chicken on the bottom half of each slider bun.
    • Top with shredded lettuce and pickles (if desired).
    • Place the top bun on and gently press down to hold everything together.
  5. Serve:
    • Serve immediately with your favorite sides or enjoy on their own!

Tips

  • For a healthier version, bake the chicken pieces in the oven at 400°F (200°C) for 15-20 minutes until crispy.
  • Add some extra heat by increasing the amount of sriracha or adding a few dashes of hot sauce to the sauce.
  • For a crunchy texture, add a few slices of red onion or shredded carrots as a topping.
