Ingredients
- For the Chicken:
- 4 boneless, skinless chicken breasts
- Salt and freshly ground black pepper, to taste
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 ½ cups panko breadcrumbs (or regular breadcrumbs)
- 1 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 tablespoon fresh parsley, chopped (for garnish)
- For Cooking:
- 2 tablespoons olive oil
- 2 tablespoons butter
- For the Sauce (optional):
- 1 cup marinara sauce (store-bought or homemade)
- ½ cup shredded mozzarella cheese
- Fresh basil leaves (for garnish)
Instructions
- Prepare the Chicken:
- Preheat your oven to 375°F (190°C).
- Season both sides of the chicken breasts with salt and pepper.
- In a shallow bowl, place the flour. In another bowl, beat the eggs. In a third bowl, combine the panko breadcrumbs, Parmesan cheese, garlic powder, oregano, and basil.
- Coat the Chicken:
- Dredge each chicken breast first in the flour, then dip it into the beaten eggs, and finally coat it in the breadcrumb and Parmesan mixture. Press down gently to ensure the breadcrumbs adhere well.
- Cook the Chicken:
- In a large skillet, heat the olive oil and butter over medium heat.
- Once the butter has melted and the oil is hot, add the coated chicken breasts to the pan.
- Cook for 4–5 minutes on each side, or until the chicken is golden brown and crispy.
- Transfer the chicken to a baking dish and place it in the oven to finish cooking for 10–15 minutes, or until the internal temperature reaches 165°F (74°C).
- Prepare the Sauce (Optional):
- If using marinara sauce, heat it in a small saucepan over medium heat.
- Once the chicken is cooked through, pour the marinara sauce over the chicken breasts, then sprinkle with mozzarella cheese.
- Return the chicken to the oven for 5 minutes, or until the cheese is melted and bubbly.
- Serve:
- Remove the chicken from the oven and garnish with fresh parsley and basil (if using).
- Serve with your favorite side dishes like spaghetti, roasted vegetables, or a green salad.
