  • 2 servings fresh or frozen udon noodles

Instructions

  1. Prepare the Noodles:
  • Cook the udon noodles according to the package instructions. Drain and set aside, reserving 1/4 cup of the cooking water.

  • In a large skillet over medium heat, cook the diced bacon until crispy. Remove the bacon with a slotted spoon and set aside, leaving the rendered fat in the skillet.
  1. Sauté the Garlic:
  • Add the minced garlic to the skillet with the bacon fat. Sauté for 30 seconds, or until fragrant. Turn off the heat to prevent the garlic from burning.

  • In a bowl, whisk together the egg yolks, Parmesan cheese, and heavy cream (if using). Slowly whisk in the reserved noodle cooking water to temper the sauce.
