- 1 tsp cornstarch mixed with 1 tbsp water (for thickening)
- 1/2 tsp sesame oil (optional)
For Garnish (optional):
- Sesame seeds
- Chopped green onions
- Red pepper flakes (for heat)
Instructions
Step 1: Prepare the Chicken
- Heat the olive oil or sesame oil in a large skillet or wok over medium-high heat.
- Add the chicken thighs and cook for 6-8 minutes, stirring occasionally, until browned and cooked through. Remove the chicken from the skillet and set it aside.
Step 2: Stir Fry the Vegetables
- In the same skillet, add a little more oil if necessary.
- Add the garlic and ginger, and stir-fry for 30 seconds until fragrant.
- Add the bell peppers, zucchini, broccoli, and carrots to the skillet. Stir-fry for 4-5 minutes, or until the vegetables are tender-crisp.
Step 3: Make the Sauce
- In a small bowl, whisk together the soy sauce, oyster sauce, rice vinegar, honey, cornstarch mixture, and sesame oil (if using).
Step 4: Combine and Cook
- Return the cooked chicken to the skillet with the vegetables.
- Pour the sauce over the chicken and vegetables, stirring to coat evenly.
- Continue cooking for another 2-3 minutes, until the sauce thickens and the chicken and vegetables are well coated.
Step 5: Serve
- Serve the stir fry over cooked rice or noodles, and garnish with sesame seeds, green onions, and red pepper flakes if desired.
Tips:
- Use any vegetables you have on hand, such as snow peas, mushrooms, or baby corn.
- For extra flavor, add a splash of soy sauce or fish sauce when stir-frying the vegetables.
- If you prefer a spicier stir fry, add chili paste, sriracha, or red pepper flakes to the sauce.
