Ingredients

For the Beef:

  • 2 lbs (900 g) beef stew meat (chuck or brisket), cut into cubes
  • 2 tbsp olive oil
  • 1 large onion, finely chopped
  • 3 garlic cloves, minced
  • 1 can (14 oz/400 g) diced tomatoes
  • 2 tbsp tomato paste
  • 1 cup (250 ml) beef stock or water
  • 1/2 cup (120 ml) dry red wine (optional)
  • 1 cinnamon stick
  • 1-2 bay leaves
  • 1 tsp ground allspice
  • Salt and black pepper to taste

For the Orzo:

  • 1 1/2 cups (300 g) orzo pasta
  • 2 1/2 cups (625 ml) hot water or beef stock
  • 2 tbsp olive oil or butter

Garnish:

  • Grated Kefalotyri, Parmesan, or Pecorino cheese
  • Fresh parsley, chopped

Instructions

Step 1: Sear the Beef

  1. Heat olive oil in a large oven-safe pot or Dutch oven over medium-high heat.
  2. Add the beef cubes in batches, browning them on all sides. Remove and set aside.

Step 2: Build the Sauce

  1. Lower the heat to medium. Add more olive oil if needed. Sauté the onion until soft and translucent, about 5 minutes.
  2. Add garlic and cook for 1-2 minutes until fragrant.
  3. Stir in tomato paste and cook for another minute.
  4. Pour in the wine (if using) and let it simmer for 2-3 minutes.
  5. Add the diced tomatoes, beef stock, cinnamon stick, bay leaves, allspice, salt, and pepper.

Step 3: Braise the Beef

  1. Return the beef to the pot, ensuring it’s submerged in the sauce.
  2. Bring to a boil, then reduce heat to low. Cover and simmer for 1.5-2 hours, or until the beef is tender. Alternatively, transfer to a 325°F (160°C) oven for 2 hours.

Step 4: Add the Orzo

  1. Preheat the oven to 375°F (190°C).
  2. Remove the pot lid and stir in the orzo, adding more water or stock if necessary.
  3. Cover and bake in the oven for 20-25 minutes, stirring once halfway through. The orzo should be tender and have absorbed most of the liquid.

Step 5: Garnish and Serve

  1. Remove the cinnamon stick and bay leaves.
  2. Sprinkle with grated cheese and fresh parsley before serving.
  3. Enjoy your Beef Giouvetsi warm with crusty bread and a crisp salad on the side.

Tips:

  • For extra richness, add a knob of butter to the sauce before serving.
  • Adjust the consistency by adding more stock if the dish looks too dry.
