Ingredients
For the Beef:
- 2 lbs (900 g) beef stew meat (chuck or brisket), cut into cubes
- 2 tbsp olive oil
- 1 large onion, finely chopped
- 3 garlic cloves, minced
- 1 can (14 oz/400 g) diced tomatoes
- 2 tbsp tomato paste
- 1 cup (250 ml) beef stock or water
- 1/2 cup (120 ml) dry red wine (optional)
- 1 cinnamon stick
- 1-2 bay leaves
- 1 tsp ground allspice
- Salt and black pepper to taste
For the Orzo:
- 1 1/2 cups (300 g) orzo pasta
- 2 1/2 cups (625 ml) hot water or beef stock
- 2 tbsp olive oil or butter
Garnish:
- Grated Kefalotyri, Parmesan, or Pecorino cheese
- Fresh parsley, chopped
Instructions
Step 1: Sear the Beef
- Heat olive oil in a large oven-safe pot or Dutch oven over medium-high heat.
- Add the beef cubes in batches, browning them on all sides. Remove and set aside.
Step 2: Build the Sauce
- Lower the heat to medium. Add more olive oil if needed. Sauté the onion until soft and translucent, about 5 minutes.
- Add garlic and cook for 1-2 minutes until fragrant.
- Stir in tomato paste and cook for another minute.
- Pour in the wine (if using) and let it simmer for 2-3 minutes.
- Add the diced tomatoes, beef stock, cinnamon stick, bay leaves, allspice, salt, and pepper.
Step 3: Braise the Beef
- Return the beef to the pot, ensuring it’s submerged in the sauce.
- Bring to a boil, then reduce heat to low. Cover and simmer for 1.5-2 hours, or until the beef is tender. Alternatively, transfer to a 325°F (160°C) oven for 2 hours.
Step 4: Add the Orzo
- Preheat the oven to 375°F (190°C).
- Remove the pot lid and stir in the orzo, adding more water or stock if necessary.
- Cover and bake in the oven for 20-25 minutes, stirring once halfway through. The orzo should be tender and have absorbed most of the liquid.
Step 5: Garnish and Serve
- Remove the cinnamon stick and bay leaves.
- Sprinkle with grated cheese and fresh parsley before serving.
