Marry Me Chicken Pasta

Ingredients:

For the Chicken:

  • 2 large chicken breasts, halved lengthwise (or 4 small chicken cutlets)
  • ½ cup all-purpose flour (for dredging)
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • Salt and black pepper, to taste

For the Sauce:

  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup sun-dried tomatoes, chopped
  • ½ tsp red pepper flakes (optional, for a little heat)
  • 1 tsp dried Italian seasoning
  • ½ cup grated Parmesan cheese
  • ¼ cup fresh basil leaves, chopped

For the Pasta:

  • 12 oz (340 g) pasta (fettuccine, penne, or spaghetti work well)
  • Salt for pasta water

Instructions:

  1. Cook the Pasta
    • Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.
  2. Prepare the Chicken
    • Pat the chicken cutlets dry with paper towels and season with salt and pepper.
    • Lightly dredge the chicken in flour, shaking off any excess.
  3. Sear the Chicken
    • Heat olive oil and butter in a large skillet over medium-high heat. Add the chicken and cook for 4–5 minutes per side until golden and cooked through (165°F/74°C internal temperature). Remove from the skillet and set aside.
  4. Make the Sauce
    • Lower the heat to medium. In the same skillet, sauté the minced garlic until fragrant, about 1 minute.
    • Stir in the heavy cream, chicken broth, sun-dried tomatoes, Italian seasoning, and red pepper flakes (if using). Bring to a simmer and cook for 5–7 minutes, until the sauce thickens slightly.
  5. Add Cheese and Basil
    • Stir in the Parmesan cheese and fresh basil. Mix until the cheese is melted and the sauce is smooth.
  6. Combine Everything
    • Return the chicken to the skillet, spooning sauce over the top. Add the cooked pasta and toss to coat in the sauce. If the sauce is too thick, add a splash of the reserved pasta water.
  7. Serve
    • Garnish with extra Parmesan and basil if desired. Serve hot and enjoy the creamy, flavorful dish!

Tips:

  • Chicken Substitute: Swap chicken breasts for thighs for a juicier option.
  • Sun-Dried Tomato Alternative: Use fresh cherry tomatoes for a lighter version.
  • Make It Extra Cheesy: Add shredded mozzarella on top and broil for a golden finish.
