Tuscan Mac and Cheese Recipe

Prep Time: 10 minutes

Cook Time: 20 minutes

Servings: 4-6

Ingredients

For the Pasta:

  • 12 oz (340g) elbow macaroni or short pasta of choice
  • Salt for boiling water

For the Sauce:

  • 2 tbsp unsalted butter
  • 2 garlic cloves, minced
  • 2 tbsp all-purpose flour
  • 2 1/2 cups whole milk (or a mix of milk and cream for extra richness)
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp black pepper
  • 1/4 tsp crushed red pepper flakes (optional)

For the Tuscan Flavors:

  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach, roughly chopped
  • 1/4 cup fresh basil, chopped (optional, for garnish)

Instructions

  1. Cook the Pasta
    • Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
  2. Make the Base Sauce
    • In a large skillet or saucepan, melt the butter over medium heat. Add the garlic and sauté for 1-2 minutes until fragrant.
    • Stir in the flour and cook for 1 minute to form a roux. Slowly whisk in the milk, ensuring no lumps remain. Bring to a simmer and cook for 2-3 minutes until slightly thickened.
  3. Add the Cheese
    • Reduce the heat to low. Stir in the mozzarella and Parmesan cheeses, mixing until fully melted and smooth. Season with salt, black pepper, and crushed red pepper flakes (if using).
  4. Incorporate Tuscan Ingredients
    • Add the sun-dried tomatoes and spinach to the cheese sauce. Stir until the spinach wilts slightly.
  5. Combine Pasta and Sauce
    • Add the cooked pasta to the skillet and toss to coat in the sauce. If the sauce is too thick, add a splash of the reserved pasta water to loosen it up.
  6. Serve
    • Garnish with fresh basil and an extra sprinkle of Parmesan cheese. Serve immediately while warm and gooey.

Optional Add-Ins

  • Protein: Stir in cooked chicken, shrimp, or crispy bacon.
  • Crunchy Topping: Sprinkle with breadcrumbs and broil for 2-3 minutes for a crispy finish.
  • Vegetables: Add sautéed mushrooms or roasted red peppers for extra depth.
