Lemon Herb Roasted Chicken

Ingredients

For the Chicken:

  • 1 whole chicken (about 4-5 lbs)
  • 2 tbsp olive oil
  • Salt and black pepper, to taste
  • 1 lemon, quartered
  • 4 garlic cloves, smashed
  • 4-5 sprigs fresh rosemary
  • 4-5 sprigs fresh thyme
  • 1 onion, quartered (optional, for extra flavor)
  • 1 tbsp butter (optional, for extra richness)

For the Herb Butter (Optional):

  • 3 tbsp unsalted butter, softened
  • 1 tbsp fresh parsley, chopped
  • 1 tsp fresh rosemary, chopped
  • 1 tsp fresh thyme, chopped
  • 1 garlic clove, minced
  • 1 tsp lemon zest
  • Salt and pepper, to taste

Instructions

1. Prepare the Herb Butter (Optional):

  1. In a small bowl, mix the softened butter with parsley, rosemary, thyme, minced garlic, lemon zest, salt, and pepper.
  2. Use a spoon to mix everything together until the butter is smooth and fragrant. Set aside.

2. Prepare the Chicken:

  1. Preheat the oven to 425°F (220°C).
  2. Pat the chicken dry with paper towels to ensure a crispy skin.
  3. Rub the olive oil all over the chicken, making sure it’s well-coated. Season generously with salt and black pepper, both inside and out.
  4. If using, carefully loosen the skin of the chicken over the breast and thighs, and spread some of the herb butter underneath the skin. If not using herb butter, proceed with just olive oil and seasoning.

3. Stuff the Chicken:

  1. Stuff the cavity of the chicken with the quartered lemon, smashed garlic cloves, rosemary, thyme, and onion (if using). These aromatics will infuse the chicken with flavor as it roasts.

4. Roast the Chicken:

  1. Place the chicken on a rack in a roasting pan or a lined baking sheet.
  2. Roast for 1 hour and 15 minutes to 1 hour and 30 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh. Baste the chicken once or twice with its own juices during roasting to keep it moist.

5. Let the Chicken Rest:

  1. Once done, remove the chicken from the oven and let it rest for 10-15 minutes before carving. This helps the juices redistribute for a juicier roast.

6. Serve:

  1. Carve the chicken and serve with roasted vegetables, potatoes, or a fresh salad.

This Lemon Herb Roasted Chicken is bursting with zesty citrus and fragrant herbs, making it a perfect centerpiece for any dinner. The skin is golden and crispy, while the meat remains tender and juicy. Enjoy!
