Ingredients
For the Beef Filling:
- 1 lb ground beef
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tbsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika

- Salt and pepper to taste
- 1/2 cup beef broth (or water)
- 1 cup cheddar cheese, shredded

For the Enchiladas:
- 8-10 small flour tortillas (corn tortillas work as well)
- 2 cups enchilada sauce (store-bought or homemade)
- 1 1/2 cups Mexican cheese blend (or more cheddar cheese)
- 1/4 cup green onions, chopped (optional, for garnish)
Instructions
- Prepare the Beef Filling
- In a large skillet, cook the ground beef over medium heat, breaking it apart with a spatula. Cook until browned and no longer pink, about 6-8 minutes.
- Add the chopped onion and minced garlic to the beef and cook for 2-3 minutes until softened.
- Stir in chili powder, cumin, paprika, oregano, salt, and pepper. Add the beef broth and simmer for 5-7 minutes, allowing the flavors to meld together. Remove from heat.
- Assemble the Enchiladas
- Preheat the oven to 375°F (190°C).
- Pour 1/2 cup of enchilada sauce on the bottom of a 9×13-inch baking dish, spreading it evenly.
- Warm the tortillas slightly in the microwave or on a skillet to make them pliable.
- For each tortilla, spoon a portion of the beef filling down the center and sprinkle with a little shredded cheese. Roll the tortilla up tightly and place it seam-side down in the prepared baking dish.
- Repeat with the remaining tortillas.
- Bake the Enchiladas
- Pour the remaining enchilada sauce over the top of the rolled tortillas. Sprinkle with the remaining shredded cheese.
- Cover the baking dish with aluminum foil and bake for 20-25 minutes.
- Remove the foil and bake for an additional 5-10 minutes, until the cheese is melted and bubbly.
- Serve
- Remove from the oven and let cool for a few minutes. Garnish with chopped cilantro and green onions. Serve hot with sour cream or guacamole if desired.
