Beef Enchiladas Recipe

These beef enchiladas are packed with savory ground beef, seasoned with Mexican spices, and rolled up in soft tortillas, topped with enchilada sauce and cheese. Perfect for a weeknight dinner or a family gathering!


Ingredients

For the Beef Filling:

  • 1 lb ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/4 tsp oregano
  • Salt and pepper to taste
  • 1/2 cup beef broth (or water)
  • 1 cup cheddar cheese, shredded
  • 1/4 cup cilantro, chopped (optional, for garnish)

For the Enchiladas:

  • 8-10 small flour tortillas (corn tortillas work as well)
  • 2 cups enchilada sauce (store-bought or homemade)
  • 1 1/2 cups Mexican cheese blend (or more cheddar cheese)
  • 1/4 cup green onions, chopped (optional, for garnish)

Instructions

  1. Prepare the Beef Filling
    • In a large skillet, cook the ground beef over medium heat, breaking it apart with a spatula. Cook until browned and no longer pink, about 6-8 minutes.
    • Add the chopped onion and minced garlic to the beef and cook for 2-3 minutes until softened.
    • Stir in chili powder, cumin, paprika, oregano, salt, and pepper. Add the beef broth and simmer for 5-7 minutes, allowing the flavors to meld together. Remove from heat.
  2. Assemble the Enchiladas
    • Preheat the oven to 375°F (190°C).
    • Pour 1/2 cup of enchilada sauce on the bottom of a 9×13-inch baking dish, spreading it evenly.
    • Warm the tortillas slightly in the microwave or on a skillet to make them pliable.
    • For each tortilla, spoon a portion of the beef filling down the center and sprinkle with a little shredded cheese. Roll the tortilla up tightly and place it seam-side down in the prepared baking dish.
    • Repeat with the remaining tortillas.
  3. Bake the Enchiladas
    • Pour the remaining enchilada sauce over the top of the rolled tortillas. Sprinkle with the remaining shredded cheese.
    • Cover the baking dish with aluminum foil and bake for 20-25 minutes.
    • Remove the foil and bake for an additional 5-10 minutes, until the cheese is melted and bubbly.
  4. Serve
    • Remove from the oven and let cool for a few minutes. Garnish with chopped cilantro and green onions. Serve hot with sour cream or guacamole if desired.

Tips

  • Add black beans, corn, or diced tomatoes to the beef mixture for extra flavor and texture.
  • If you prefer spicier enchiladas, add diced jalapeños or use a spicier enchilada sauce.
  • You can substitute ground turkey or chicken for a lighter version of the enchiladas.
