These chicken quesadillas are loaded with tender, seasoned chicken, melted cheese, and crispy, golden tortillas. They’re perfect for a quick meal or as a snack, and they can be easily customized with your favorite fillings!
Ingredients
For the Chicken:
- 2 boneless, skinless chicken breasts, cooked and shredded (or diced)
- 1 tbsp olive oil
- 1 tsp chili powder
- 1 tsp ground cumin
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
For the Quesadillas:
- 4 flour tortillas (8-inch)
- 2 cups shredded Mexican cheese blend (cheddar, Monterey Jack, etc.)
- 1/2 cup cooked bell pepper and onion (optional, for added flavor)
- 1/2 cup salsa (optional, for serving)
- 1/4 cup sour cream (optional, for serving)
Instructions
- Cook the Chicken
- Heat olive oil in a skillet over medium heat. Season the chicken breasts with chili powder, cumin, garlic powder, onion powder, salt, and pepper.
- Cook the chicken for 5-7 minutes per side until fully cooked and the internal temperature reaches 165°F (75°C).
- Shred the chicken using two forks or dice it into small pieces. Set aside.
- Prepare the Quesadillas
- Heat a separate large skillet or griddle over medium heat.
- Place one tortilla in the skillet and sprinkle 1/2 cup of shredded cheese evenly over the tortilla.
- Add a portion of the cooked chicken on top of the cheese, followed by some bell pepper and onion (if using).
- Top with another 1/2 cup of cheese and place another tortilla on top.
- Cook the Quesadillas
- Cook the quesadilla for about 3-4 minutes, until the bottom is golden brown and crispy. Flip it carefully using a spatula, and cook for another 2-3 minutes until the cheese is melted and the other side is golden brown.
- Remove from the skillet and set aside. Repeat with the remaining tortillas and filling.
- Serve
- Slice the quesadillas into wedges and serve with salsa, sour cream, or guacamole on the side.
Tips
- For extra flavor, add jalapeños, black beans, or corn to the filling.
- To make the quesadillas even crispier, brush the outside of the tortillas with a little melted butter before cooking.
- You can also make these quesadillas in the oven: place the filled quesadillas on a baking sheet and bake at 375°F (190°C) for 10-12 minutes, flipping halfway through.
